Miguel has been making tortillas in our kitchen since we opened, back in 2015. There's no marketing trick here: he's simply the best tortilla-maker we've come across, and at Casco Viejo we let him do it his way, without getting in his way.
The recipe isn't a secret (though Miguel says he has his little tricks), but the exact cooking times, the amount of potato, and the care that goes into it are the things that make the difference. And only Miguel really knows how.
